It depends on how far you're willing to take it. If you want to keep a stock interior look, there's not a ton you can remove:
Spare tire / jack
Rear speakers
Back seats
Hatch/trunk cover
Compact battery in the front
To gut it:
Headliner
Door panels
Passenger seat
Carpeting
Stereo and front speakers
Gut it for racing:
Dash, carbonfiber/fiberglass replacement
Side windows/ plexiglass replacement
Gut door panels/weld doors shut
