Power Steering
I think something in there is making noise, and when I turn my wheel all the way either left or right, the car almost stalls and makes that knocking noise, so I am assuming it has the power steering. I see people in small cars that take out the power steering systems out of their cars, would it make such a difference to where I woulkd have trouble turning the steering wheel if the system were to be removed?

if you loop the rack, or remove the o ring, it will work just like a close ratio manual rack. Ive been tempted for the hp pick up.
but in your case check the fluid.. it probably needs filled. if you can improve slip plates(lunch trays work), take the cap off and have a friend turn the wheel lock to lock and listen check how the level changes.

the fluid is right at the line so I have been needing to get it filled, but to get rid of the system and lossing thw weight/gain of power would be cool

A underdrive pulley would be even better with the power steering eliminated, and then no ac...
